You must have heard about gnocchi. Traditionally, it’s a varied family of dumplings in Italian cuisine. They resemble small pieces of dough, usually round or a similar shape, that are first boiled in water, and later tossed with different sauces. Now, nutritionist Pooja Makhija tried to give the gnocchi a delightful and healthy twist with a recipe. She has shared a video on Instagram demonstrating the recipe for carrot gnocchi. This is a very useful dish, especially since winter is the time to load up on carrots. This vegetable improvises vision, immunity and digestion. Carrots also help control diabetes and take care of your heart health. Also, as Pooja Makhija says, carrot gnocchi is “such a tasty way to ensure your family eats your veggies.”

1) Carrots
2) Grated garlic
3) Chili flakes
4) Oregano
5) Salt and pepper
6) Wheat flour (or even millet)
7) Cornflour
How to make carrot gnocchi?
Step 1: First of all, peel carrots and chop them into pieces. You can now blanch or pressure cook them. Take the boiled carrot chunks and mash them all together.
Step 2: Add some ingredients to your mashed carrots. Put grated garlic, chilli flakes, oregano, salt and pepper. Add wheat flour or even millet followed by corn flour (it’s a good binding agent).
Step 3: Knead them into a dough. Roll into pipes and cut those into small pieces (squares). Roll over the back of a fork to create a pattern of gnocchi.
Step 4: Steam the squares for about 7-10 minutes in water (add salt and fried herbs to the water to enhance the taste)
Step 5: Add the gnocchi to a sauce of your choice. Here she used pesto sauce.
